This post was meant to have been written days ago. It’s not even a very long or informative post. It’s probably one of the easiest recipes I’ve ever written up. But, still, it disappeared into the time-space vacuum otherwise known as ‘Life’. It was also a post that proved to me that cheese straws are one of the most boring foodstuffs in the world to try and photograph.
Ticklemore is the goats’ cheese I wrote about last week. It gives these twists a hint of the caprine without being a Billy Goat’s Headbutt on the tastebuds. You could also use any soft goats’ cheese. This recipe makes 15-20 twists.
Ingredients
340g pack of ready-made puff pastry
40g Ticklemore or soft goats’ cheese, crumbled or chopped into very small pieces
½ tsp dried oregano
Salt and pepper
Pre-heat the oven to Gas Mark 6 or 200˚C (180 fan-assisted) and line two baking trays with baking parchment. Roll out the chilled puff pastry until it’s about the size of a sheet of A4 paper. Dot the goat’s cheese over and sprinkle it with the oregano. Season with salt and pepper.
Fold the pastry in half length-ways (you’ll need to do this quickly so the cheese doesn’t all fall off) and then roll it out again until it’s about as thick as a £1 coin. Cut the pastry into 1cm strips.
Take a strip, twist it several times and put it on the baking parchment. Repeat until all the pastry strips are used up.
Bake for 15-20 minutes until they are crisp and golden. Remove from the oven and as soon as you can handle them, use a fish slice to gently prise them off the paper. Leave to cool.
