June has been a busy one, so much so that I’ve had little time to even eat cheese, let alone write about it. A sad state of affairs indeed. Fortunately, my fellow bloggers have waved the cheese standard, passed the cheese baton and generally paid homage to the fromage and so this month’s Cheese, Please! Challenge, as usual, has some lovely recipes, all featuring the abundant, fresh herbs that are verily flourishing at this time of year. So without further delay, I bring you cheese and herbs…
The first to the table was bona fide proper cheese-maker Northumberland Cheese, who offered up their Spring Asparagus and Nettle Cheese Tart. The nettles (yes, nettles are a herb!) are in the cow’s milk cheese, which is combined with seasonal asparagus to make a super-simple puff pastry tart. The company also make Brinkburn which I scoffed a few weeks ago.
It was a cacophony of tarts (if there is such a thing) as minutes later Edibletcetera presented her Summer Tart of Roasted Tomatoes, Goat’s Cheese and Fresh Basil Pesto. Also using the ever-easy puff pastry, this time the tart was filled with ripe tomatoes, thyme, soft goat’s cheese and home-made pesto, packed with basil and the scent of summer.
The aptly-named Cheese Tart added to the tart spectacular with a Summer Salad Cheese Tart, a creamy cheesy classic medley of mozzarella, tomato and basil that conjured up ‘sunny summer holidays’.
I was next along with a Ready Steady Cook style conglomeration: Cheddar Cheese Pasties with Sorrel and Elephant Garlic. The garlic is roasted until sweet and the sorrel sautéed down and both are then combined with mashed potato and lots of sharp Cheddar cheese for a perfect picnic pick-me-up.
Mrs Portly’s kitchen didn’t disappoint this month with her spectacular-looking Cheese, Onion and Sage Pithivier. In a puff pastry case that wouldn’t have let the side down at one of those Tudor banquets with twenty-seven different courses, Cheddar and Parmesan cavorted with garlic, onions, potatoes and sage for a splendid, solid summer supper.
Put On Your Cake Pants steered us away from puff pastry overload next with her Herbed Pasta with Roasted Zucchinis, Potatoes and Cheese. Potatoes and zucchinis (courgettes over ‘ere) are roasted and then combined with corn, ricotta, mozzarella and basil to make a pasta dish perfect for long light evenings (if the monsoon stops, that is).
Pasta Devotee is new to Cheese, Please! so do all pop over and check out her blog. This month’s offering is a classic Pizza with Mozzarella, Tomato and Basil. A home-made pizza base is liberally spread with tomatoes, basil and three – count em’! – cheeses: mozzarella, Cheddar and feta for a child-friendly, easy-to-scoff recipe.
Next up was The Pink Rose Bakery with a delicious Halloumi and Pomegranate Salad with Lime and Mint Dressing. The halloumi is fried until crispy and then combined with the jewel-like pomegranate seeds, sugar snap peas, cucumber and salad leaves, before being spritzed and spruced with a dressing of lime and mint leaves.
Another Cheese, Please! regular, Food Jam was along with some Cheese Burgers. But these weren’t any old Cheese Burgers. These were beefburgers made with onions and oregano and stuffed to bursting with Cheddar and Gouda for a hot melty-cheese barbeque bite sensation.
Another salad joined us from New Recipe Night in the form of Mediterranean Grain Salad with Goat’s Cheese. Bulgur wheat is combined with cherry tomatoes, parsley, shallots and a vinegar and oil dressing and – just before it all starts to look too virtuous – lots of lovely fresh goat’s cheese is whacked on the top.
Introducing me to a whole new food thang, Food Daydreaming came along with a Paneer Frankie. A ‘Frankie’ is an Indian wrap or burrito and this one, a paratha, was filled with spicy paneer cheese and lime zest and juice and coriander. A handy, cheese, spicy snack if ever there was one.
Finally came Flippenblog, tackling the terror that is a Cheese and Herb Souffle. Packed with Parmesan and Cheddar cheeses, as well as Dijon mustard and parsley and basil, these little pots of loveliness certainly rose to the Cheese, Please! Challenge (a soufflé…rose to the challenge…geddit?!)
